This is my take on Whole Foods Market famous’ “Sonoma Chicken Salad”, which I tasted many times…this salad is beyond delicious! The concoction of chicken, nuts, grapes, celery, mayonnaise and honey are just absolutely divine.  I salute Whole Foods Market for having the best good quality ingredients. I miss having this, so the memories inspired me to make this recipe today. And since I cannot find poppy seeds and pecan nuts here in Manila, I replaced it with Walnuts and omit Poppy Seeds.

Chicken Walnut Salad

Ingredients
  1. SALAD
  2. 1 kilogram Chicken Breast Fillet, skinless
  3. 1 liter Water
  4. 1/4 cup Fresh Parsley
  5. 1 tablespoon Thyme
  6. 1 cup Walnut, toasted and chopped coarsely
  7. 1 cup red seedless grapes, halved
  8. 2 stalks celery, sliced thinly
  9. DRESSING
  10. 1 1/2 cups Mayonnaise
  11. 1 tablespoon Apple Cider Vinegar
  12. 4 tablespoons (60ml) Honey
  13. Salt and freshly ground pepper, to taste
Instructions
  1. In a medium bowl, combine mayonnaise,apple cider vinegar, honey, salt and pepper. Chill in the fridge until ready to dress the salad.
  2. Put the water, parsley and thyme in a medium saucepan and bring to a boil. Lower the heat to medium and add the chicken breasts, cover and poach the chicken for 15 minutes or until firm to the touch. Remove the pan from the heat and drain. Let it cool before chilling in the fridge. Do not remove the chicken in the fridge until ready to use.
  3. Once the chicken is cooled, transfer the chicken to a cutting board and cut into bite-size chunks. And put them in a large mixing bowl. Stir in walnuts, grapes, celery and dressing. Season with salt if it needs more seasoning.
