Grilled Balsamic Chicken Salad with Lemon Quinoa Bowl

Balsamic Chicken
  1. 2 Chicken Thigh or Breast Fillet
  2. 3 cloves of Garlic, chopped coarsely
  3. 2 tablespoons Extra Virgin Olive Oil, finely shopped
  4. 2 tablespoons Balsamic Vinegar
  5. Salt & Pepper, to taste
Lemon-Quinoa Salad
  1. 1 cup Quinoa
  2. 2 tablespoons Fresh Lemon Juice
  3. Salt & Pepper, to taste
Salad
  1. 100 grams Romain Lettuce, washed and drained
  2. 200 grams Cherry Tomatoes, cut into halves
  3. 1/2 medium Red Onion, thinly sliced
  4. 1/4 cup Pitted Kalamata Olives
  5. 50 grams Feta Cheese
Balsamic Vinaigrette
  1. 6 tablespoons Extra Virgin Olive Oil
  2. 2 tablespoons Balsamic Vinegar
  3. 1 clove of Garlic, finely chopped
  4. Salt and Pepper, to taste
Instructions
  1. Marinate the chicken with balsamic vinegar, olive oil, and garlic. Place in the fridge for 20 minutes.
  2. Meanwhile, cook quinoa according to package instructions. Once quinoa is cooked, cool it down to room temperature.
  3. For the vinaigrette, place all the ingredients in a blender or food processor. Process until well blended and creamy. Season with salt and pepper.
  4. Oil the grill pan and preheat over medium heat and. Season both sides of chicken with salt and pepper, and coat both sides of chicken with olive oil. Grill the chicken for 5 minutes per side or until firm to touch.
  5. Divide the lettuce, cherry tomatoes, olives, onions, feta cheese, and lemon-quinoa among two salad bowls. Top with grilled chicken. Serve the dressing on the side and serve immediately.
