Grilled-Lime Salmon with Mango-Avocado and Quinoa Salad2

Salmon and quinoa are very nutritious. They are both rich protein and quinoa contains almost twice as much fiber as most other grains. The mango-avocado goes perfectly well with salmon and quinoa which makes the dish more scrumptious!

  1. 2 (200 grams) skinless Salmon fillets
  2. 3 tablespoons Light Olive Oil
  3. 2 tablespoons Fresh Lime Juice
  4. 3 cloves of Garlic, chopped finely
  5. Sea Salt and Freshly Ground Black Pepper, to taste
  6. Quinoa Salad
  7. 1 cup Quinoa, uncooked
  8. 1/2 teaspoon Sea Salt or Kosher Salt
  9. 1/2 cup Cherry Tomatoes, cut into halves
  10. 2 tablespoons Red Onions, finely chopped
  11. 2 tablespoons Fresh Lime Juice
  12. Mango-Avocado
  13. 1 medium Ripe Mango, peeled and diced
  14. 1 medium Avocado, peeled and diced
  15. 3 tablespoons Red Onion, finely chopped
  16. Salt, to taste
  1. Marinate the salmon in lime juice and garlic. Place in the fridge for 20 minutes.
  2. Meanwhile, cook quinoa according to package directions. When cooked cool it down to room temperature.
  3. Place quinoa in a bowl, add cherry tomatoes, red onions, fresh lime juice, and season with salt.
  4. For the mango-avocado, combine everything in a bowl and season with salt.
  5. Oil the grill pan and preheat over medium heat and. Season both sides of the salmon with salt and pepper, and coat both sides o with olive oil. Grill the salmon 3 minutes per side or until firm to touch.
  6. To plate, divide the quinoa salad among two plates. Top with salmon fillet and mango-avocado mixture. Serve immediately.
